With Easter just around the corner, we've been getting inspired by some great recipes that include our hero vegetables.
These are simple to make, so you can enjoy the extra time with your friends and family this Easter Sunday.
Lunch - Herby Kale Omelette with Manchego Cheese from Naturally Ella. Starring Kale
This is not just any omelette, this is Naturally Ella's Herby Kale with Manchego Cheese omelette. The tasty, herby kale sauce brings the simple dish to life and adds a splash of colour to your plate. Quick and easy to make, Naturally Ella suggests adding a couple spoonfuls of the kale sauce before the omelette is fully set, letting it swirl into the uncooked egg. The remaining sauce can be served alongside the dish for extra herby flavour and goodness.
Dinner - Lamb with Cavolo Nero from Lucy Loves. Starring Cavolo Nero
What is Easter without a traditional lamb dinner? This mouthwatering, rustic dish is one of Lucy Loves' favourites, and we would have to agree with her. The effortless one-pot wonder is made up of crisp potatoes, tender lamb steaks, and soft red onions, combined with cavolo nero and balsamic vinegar.
Dessert - Vanilla Spinach Cake with Vanilla Frosting from Veggie Desserts. Starring Spinach
Veggie Desserts is our go-to when it comes to sweet treats using our ingredients. Her vanilla spinach cake with vanilla frosting is a great way to round off the Easter weekend with its vibrant shade of green sponge. As Kate from Veggie Desserts explains, “you can't taste the spinach at all, so it's a vanilla cake with a leafy green secret.” Sounds good to us - and you can decorate your cake as you wish with mini chocolate Easter eggs to keep all the family happy.
