Oriental Salmon, Crispy Kale and Noodle Salad

Ingredients
2 nests wholewheat noodles 120g
½ x 250g bag Kale
1 tbsp toasted sesame oil, plus 1 tsp
1 tbsp runny honey
1 tbsp soy sauce
2 skinless salmon fillets, approx. 250g, diced
75g baby corn, sliced
1 red pepper, sliced 160g
2 tsp sesame seeds, toasted
Instructions
Cook the noodles according to pack instructions, drain and run under cold water.
Meanwhile, toss the kale in 1 tsp sesame oil and place in the tray of an air fryer, fry for 5-6 minutes at 200oC until crispy. Set aside.
Meanwhile, mix together the 1 tbsp oil, honey and soy and stir in the salmon. Add to the tray of an air fryer and fry for 6-7 minutes until just cooked through. Toss salmon and the juices into the noodles in a large bowl with the corn, pepper and sesame seeds.
Just before serving, toss through the kale to serve.
