Kale Bean Burgers by Jenna Hope Nutrition

Ingredients

150g Quinoa
1x 400g Can of butter beans
1 Tsp Olive oil
½ Leek
100g Kale (no stalks)
2 Tsp Paprika
1 Tsp Smoked paprika
1 Tsp Cumin
1 Tbsp tomato puree
Juice of ½ a lemon
Generous pinch of salt and pepper

Extra olive oil for frying

For the sweet potato fries:

1 Extra large sweet potato
1 Tbsp olive oil
Generous pinch of salt and pepper

Serve with burger buns

Instructions

  1. Preheat the oven to 180°C.
  2. Cook the quinoa as per the cooking instructions.
  3. Drain the butter beans and dry them using a tea towel. Mash them in a bowl.
  4. Next thinly slice the leeks into rounds. Heat a pan with the olive oil and add the leeks to the pan with the kale and the paprika and cumin. Cook for a few minutes or until soft.
  5. Next, add the quinoa and leek/ kale mix to a bowl and mix well. Squeeze in the lemon juice, and stir in the tomato puree, salt and pepper. Mix until a dough like texture occurs.
  6. Split the mix into burger patties and place them in the fridge for 30 minutes.
  7. In the meantime, slice the sweet potato lengthways into thin chips and drizzle in olive oil, salt and pepper. Place in the oven for 30-35 minutes.
  8. Once the burgers have set add the olive oil to a pan and fry for 3-4 minutes on each side.
  9. Repeat until all the burgers are cooked. Enjoy!
