Pan Seared Sea Scallops with Garlicky and Lemon Kale, Walnuts and Mash by Noonis Kitchen

Ingredients

Mash:

400g potatoes

200g oat milk

1 tbsp dairy-free margarine

1 tbsp olive oil


Kale:

100g kale (washed and seasoned with salt)

2 cloves of garlic chopped

1 tbsp olive oil

Squeeze of lemon


Sea-scallops:

6 sea scallops

1tbsp dairy-free margarine

½ tbsp olive oil


20g walnuts (chopped)

Instructions

Mash:
Boil potatoes until cooked through and drain
Mash potatoes with a potato masher and add margarine, oil and oat milk to pan
Season with salt and pepper and mix


Kale:
Heat oil in a pan on a medium heat
Add garlic and kale, cook until kale is tender and season with salt and pepper to taste with a squeeze of lemon


Sea-scallops:
Heat oil in a pan on a medium to high heat and add dairy-free margarine and oil
Cook sea scallops for 1-2 minutes on each side
To plate, place the mash on a dish, top with the kale and the sea-scallops and garnish with walnuts and you’re ready to serve!
